Nowadays we have become increasingly skeptical towards the cosmetic products we use and the chemicals we expose ourselves to. Since flora biodiversity (or biological diversity) on Earth is enormous, a great number of these aromatic and medicinal plants can be used for cosmetic purposes.

People have been using natural products since the dawn of human history. Only toward the end of the 19th century, however, have we started to know something about the chemistry of some of these products. With our increasing knowledge of chemistry and related sciences, we have begun to duplicate some of the natural chemicals and at the same time make modifications in these compounds, or sometimes produce completely new ones.... A multidisciplinary Historic, Cultural, Environmental and Dietary Overview

The Mediterranean diet focuses on eating foods that mainly come from plants, such as whole grains, legumes, nuts, fruits, and vegetables. It also suggests eating healthy fats like olive oil instead of butter, replacing salt with herbs and spices and consuming mostly white meat like fish and chicken, instead of red *meat.

This online course aims to introduce participants to and raise their awareness about the typical Mediterranean food products and diet, as well as the intangible cultural heritage and goods that are related to food: customs, traditions, social status, culinary practices and tools, ceremonies, and values. This course is ideal for anyone interested in nutrition and its multicultural dimensions.... [-]

Herbs! Flavorful plants used as medicine, seasoning or flavoring. They add a pinch of excitement to the art of cooking. Herbs are contained in numerous products that we use every day. Let's read some labels: mint toothpaste, shampoo with chamomile, aloe cream, cough syrup with echinacea, etc. As plant-derived or organic ingredients they can be found in hot drinks, pastries, insect repellents, and hair dyes. Because of their multiple uses and beneficial properties, they are often included in cooking, medicine, cosmetics, and gardening. Imagine how life would be if herbs did not exist. Odourless? Colourless?

Honey, food for Gods, medicine for people! What about honey? Is it a superfood? Over the centuries, honey has intrigued philosophers intellectuals, poets, authors, and scientists. It was incorporated into the diet and contained in the remedies of ancient Greeks, while it also played a major role in important social occasions such as feasts, sacrifices, and athletic games.... Agriculture and food regulation is no longer primarily the responsibility of states, but implies common rules, common principles and common regulators extended to the world scale. In addition, it is multidimensional, implying a balanced protection of several interests and values. These two aspects raise several problems of a legal, cultural and political nature.

Through a vertical comparison of different food safety regulatory systems students will study the main issues of food safety regulation and different strategies and approaches for analysing them. Students will learn about institutions and agreements such as the World Health Organization, Codex Alimentarius, International Organization for Standards, International Plant Protection Convention and the World Organization for Animal Health, so as to understand their role in international agri-food policy, especially food safety policy. This Specialisation also defines food safety law and regulation in the international legal space focusing on linkages to World Trade Organization (WTO) law.... [-]
